Grain Free-Banana Nut Butter Pancakes
These quick and easy grain free banana nut butter pancakes mean that you can whip up pancakes any day of the week! Not just for weekends anymore, your kids will be thrilled to get a stack of warm delicious pancakes on their plate before they head out for a busy day at school. This recipe is full of vital nutrients like essential fatty acids, protein, choline, magnesium and fiber. A great start for anyone’s day! Serve with a side of berries and some coconut yogurt, bacon or sausage. You could make these nut free by using a sunflower butter.
- 1 Banana
- 1 heaping Tbsp cashew butter or nut butter of your choice.
- 1 egg
- 1 Tbsp ground white chia seed
- pinch of sea salt
- 2 tsp ghee or coconut oil for cooking
You can mix all the ingredients together in a bowl with a fork or use a hand mixer or blender. A food processor will work for making larger batches but I find there is not enough substance in one batch to make the food processor work effectively. These are a great recipe to batch cook. You can double or triple the recipe to make enough for the whole week. Simply pop them in the oven or toaster to warm and you are out the door. Even if you don’t batch cook them ahead of time these only take about 10 minutes to make from start to finish. A little more time than a bowl of cold cereal but I think 10 minutes is pretty doable most days. You can flavour these pancakes with just about anything you like. Try adding a tablespoon of raw cacao powder or a teaspoon of vanilla powder, cinnamon and Chai tea spices taste yummy too. Add dried blueberries or raisins, the world is your flavour oyster here, experiment and enjoy!
